Antonio Loves… The Mediterranean Diet

MOF MOF is my motto when it comes to cooking.  Many of you will know that it stands for Minimum of Fuss, Maximum of Flavour. The most important element of cooking to me in addition to MOF MOF is that the ingredients are fresh and of a high standard. I believe it is important to remain loyal to the ingredients and cooking traditions of my country.

A few years ago, I worked with Daiichi-Sankyo on the Make Your Heart Feel Good campaign. The campaign highlighted that unhealthy diet and too much salt can cause poor heart health, but by cooking with fresh ingredients full of nutrients and cooking them the right way you can prevent this.  More recently there has been research by charities such as the Alzheimers society who have suggested that adhering Mediterranean diet can not only improve heart health but also reduce the chance of developing dementia.

I think that the important message we are getting loud and clear, is the very real need to eat more of the good things and much less of the foods we don’t need and the massive amount of salt that we have got used to putting on our food. My cooking is rich in fruits, vegetables, and heart healthy fats. Below are three recipes for you to enjoy, along with many more Mediterranean inspired dishes on my website.
